Hummus

This hummus is so delish!!! I not only snack on it, but I use it as a spread on top of naan with my veggies on the side. Super easy to make! 

Ingredients

  • 1 cup roasted beets
  • 3 garlic cloves,
  • 2 Tbs EVOO
  • 2 Tbs tahini
  • 1 Tbs fresh squeezed lemon juice
  • some lemon zest
  • a handful of parsley

Steps

  1. Combine all ingredients in a food processor to desired consistency
