This hummus is so delish!!! I not only snack on it, but I use it as a spread on top of naan with my veggies on the side. Super easy to make!
Ingredients
- 1 cup roasted beets
- 3 garlic cloves,
- 2 Tbs EVOO
- 2 Tbs tahini
- 1 Tbs fresh squeezed lemon juice
- some lemon zest
- a handful of parsley
Steps
- Combine all ingredients in a food processor to desired consistency
